Spicy Falafel

Ingredients

2 tbsp of sunflower or vegetable oil
1 small onion finely chopped
1 garlic clove, crushed
400g can chickpeas, washed and drained
1 tsp ground cumin
1 tsp ground coriander
Handful of parsley, chopped, or 1 tsp of dried mixed herbs
1 egg, beaten

Method

1. Heat 1 tbsp of oil in a large pan, the fry the chopped onion and garlic over a low heat for 5 minutes until softened.

2. In a large mixing bowl place the chickpeas and spices and add the softened onion and garlic. Mash together with a fork or potato masher until the chickpeas are totally broken down.

3. Stir in the parsley or dried herbs, with pepper to taste. Add the egg, then squish the mixture together with your hands.

4. Mould the mixture into 6 balls, then flatten into patties. To cook, place under a medium heat grill for 4-6 minutes on each side, until lightly browned. Serve hot or cold with couscous or pitta bread and a side salad.
