We’ve got some really exciting activities planned over the next few months.  Get the whole family involved in National Smile Month and our healthy Swapathon challenge.  Why not have a go at making our delicious lamb and apricot burgers?  They’re so easy and really tasty.

Lamb and Apricot Burgers

Ingredients
1 tbsp olive oil
1 red onion, very finely chopped
2 garlic cloves, crushed
2 tsp ground cumin
2 tsp ground coriander
500g pack lean lamb mince
8 dried apricots, finely chopped
½ 20g pack mint, finely chopped
50g fresh breadcrumbs

To serve
Bread buns, salad and tzatziki

Method
1.    Heat 1 tbsp of oil in a pan, add the onion and soften for five minutes
2.    Once softened add the crushed garlic, cumin and coriander and cook for a further two minutes
3.    Remove the onion, garlic and spices from the pan and place into a mixing bowl, into the bowl also add  the lamb mince, apricots, mint and breadcrumbs. Mix the ingredients together
4.    Once mixed shape into four burgers
5.    Grill the burgers for 5-8 minutes on each side until cooked through
6.    Serve in buns with lettuce, cucumber and tzatziki.
